Onion Rings

Servings: 4

Ingredients:

1/4 cup all-purpose flour
2 tbsp cornstarch
1 tablespoons instant mashed potatoes
big pinch of cayenne or red chili powder
1/2 cup cold club soda

1 cup Panko (Japanese-style breadcrumbs), or as needed
fine salt to taste
vegetable oil for frying
1-2 yellow onions, cut into 1/4-inch rings

 

Direction:

Mix flour, corn starch, mashed potatoe, cayenne pepper in a big bowl. Make batter with club soda. Cut onions into rings. Dip onion rings in batter and then coat with bread crumbs and fry them till golden brown. Drain out excessive oil in paper towel. Enjoy onion rings hot!
